Danstar Nottingham Ale Yeast:

If you are looking for amazing versatility from an ale yeast, look no further than Nottingham dry brewing yeast. Nottingham offers great performance with every batch, allowing brewers to cover a wide variety of beer styles with just one yeast type.

The Nottingham strain was selected for its highly flocculant & relatively full attenuation properties. It produces low concentrations of fruity and estery aromas and has been described as neutral for ale yeast, allowing the full natural flavor of malt & hops to develop.

The recommended fermentation temperature range of this strain is 14° to 21°C (57° to 70°F) with good tolerance to low fermentation temperatures (12°C/54°F) that allow this strain to be used in lager-style beer. With a relatively high alcohol tolerance, Nottingham is a great choice for creation of higher-alcohol specialty beers!

Nottingham is available in 11 gram vacuum-sealed sachets. Bulk quantities are available.

Brewing Properties:
• Quick start to fermentation, which can be completed in 4 days above 17°C.
• High attenuation, reaching a final gravity near 1.008 (2°P).
• Fermentation rate, fermentation time and degree of attenuation is dependent on inoculation density, yeast handling, fermentation temperature and the nutritional quality of the wort.
• Shows flocculation at completion of fermentation, and settling is promoted by cooling and use of fining agents and isinglass.
• The aroma is slightly estery, almost neutral and does not display malodours when properly handled. Because of flocculation, it may tend to slightly reduce hop bitter levels.
• Best when used at traditional ale temperatures after rehydration in the recommended manner.
• Lager-style beer has been brewed with Nottingham, however low fermentation temperature requires adaptation of the pitching rate to ensure proper attenuation.

    I keep our house pretty cold during the winter, and picked this yeast for its ability to handle it. Works fast and quite energetic! I use a blow off tube for the first couple of days and then go to an airlock.

    I needed an english style yeast so I decided to try this stuff. I noticed very active fermentation within 12 hours of pitching. This stuff is very active. Make sure that you're using a blow off tube!

    05 May 2015 Nottingham ale yeast is a solid performer always get your yeast started 6-8 hours before you brew and this yeast will rock the fermentation . Use 3 tablespoons of dextrose and a small amount of yeast nutrient in 8 ounces of water for your starter. Make sure the starter water was boiled and cooled to 84 F . Great product. Nottingham ale yeast Clears rapidly and leaves a clean tasting ale. Its number one for excellent beer and ales.

    I made 2 brew house pale ale kits, one with Nottingham and one with the coopers that came with the kit. Both kits were very good but I could not taste any difference between the two. I will just use the coopers from here on.

    I use this yeast for many of my brews and I always get great results. I brew North American style IPA's, stouts, brown's, bitters, etc. I find Nottingham Ale yeast gives my homebrew a full flavour and as the description says it's highly flocculant. I love Beer Grains! Woot! Woot!

    I have never had a problem with this yeast before, however, when I was re-hydrating the yeast I was getting no action. I threw it in my wort anyway (just to see) and I got no action from the yeast after 24 hours with a 72 point wort. It's good that I had some refrigerated yeast from my previous batches to pitch. This is the first time I've ever had dead yeast from Danstar.

    I love using this yeast as I have never experienced a bad batch. Quick to start and never fails after (priming) in the bottles. Nice effervescence.
