Acidulated Malt (Best Malz):
Best Acidulated malt, sometimes called Acid Malt or Sour Malt, reduces the pH of the mash. Beneficial to brewers that want to reduce mash pH without the adding products to the mash, for instance citric acid . Usually the inclusion of acidulated malt as 1% of the grain bill will reduce the pH by 0.1 with 2% being 0.2 and so on. After 10% of the grain bill the acidulated malt can be harder to work with and produce more distinctive flavours.
