French Colombard is one of the world's great blending grapes, which makes it well suited to this purpose, although in the past few decades it has been used to make light, refreshing white wines in both South West France and in new world regions like California and South Africa.

Colombard has a relatively neutral flavour, light body, and low tannins. Its high acidity lends a crisp, tart flavour to blends with more flavourful white grapes such as chardonnay, sauvignon blanc, and chenin blanc. Colombard tasting notes include tart green apple, sweet melon and peach, and bitter almond.
