Juniper berries can add a unique flavour profile to beer, imparting a subtle piney, resinous, and slightly citrusy note. Here's how you can use juniper berries in your beer:

  • Preparation:Before adding them to your beer, lightly crush the berries with a mortar and pestle or by rolling them with a rolling pin. This helps release their flavours and aromas.
  • Timing: Decide when you want to add the juniper berries to your brewing process. You can include them during various stages, such as during the boil, in the fermenter, or even during secondary fermentation. The timing will affect the intensity of the juniper flavour in the final beer.
  • Boil Addition: If adding juniper berries during the boil, toss them into the kettle during the last 10-15 minutes of the boil. This allows the flavours to infuse into the wort without losing their potency through prolonged exposure to heat.
  • Fermentation: Alternatively, you can add crushed juniper berries directly to the fermenter after primary fermentation has slowed down. This method allows for more subtle flavours to develop over time without being altered by the heat of the boil.
  • Quantity: The amount of juniper berries you use will depend on your personal taste preferences and the desired intensity of flavour. Start with a small amount, such as 14 - 28 grams for a 19 litre (5 gallon) batch of beer, and adjust according to taste in future batches.
  • Beer Styles: Use in heavy beers such as porters, stouts, and doppelbocks.  Try them out in a witbier or any wheat beer style.
