Good yeast, keep it cool

S-04 is a great yeast but it's a bit controversial. Keep it cool or it gets too estery. Otherwise, it gives a great subtle flair to your beers. Lower attenuating than US-05 and amazing flocculation.

S-04 is rapidly becoming my go-to yeast for my English-style ales, and I now prefer it to Windsor and Nottingham dry yeast. I really like the fact that it doesn't require rehydration before use. I also find that it starts fast, with evidence of active fermentation within 12 hours.

really great yeast, starts well and finishes quick. Sg from 1.068 to 1.010 and krausen dropped within 72 hours.

Pitched one packet of this yeast in a 5 gal batch of brown ale. 24 hours later, the beer had a huge krausen and the airlock was bubbling vigorously.
This yeast appears to flocculate very well, as the krasuen was dropping 48 hours after pitching.
Cant 'wait to taste this beer.
