Chitosan (50g packet)
Chitosan is used with Kieselsol to clarify wine, mead, and beer and is added late in the brewing process. It improves flocculation and removes yeast cells, fruit particles, and other haze-causing detritus. Chitosan is a linear polysaccharide made from chitin shells of crustaceans treated with an alkaline substance, such as sodium hydroxide, containing randomly distributed D-glucosamine and N-acetyl-D-glucosamine.
